Broccoli Hummus Quinoa Bowl

Since posting my mixed roasted vegetable quinoa recipe, I have to admit that I have been making it quite a lot. As quinoa and vegetables are such a quick and easy base for any vegan or non-vegan dish, I decided to edit my previous recipe slightly. I aimed to maintain the almost instantaneous (well not quite but faster than most dishes to make and a whole lots easy!) principle but with different flavours and textures. To be honest, I may even prefer this one! This broccoli, hummus and quinoa bowl packs a nutrient punch with 3 of your 5 a day plus protein from the quinoa and ounces of flavour from the cumin scented broccoli. Furthermore, the addition of homemade hummus makes it even more incredible.

Hummus

Mmmmmm creamy and tasty and vegan! What more could you want from a dip?! Hummus sometimes gets a bad rep due to the amount of oil but if you use some of the chickpea liquid or even water and less oil this can still be as creamy and delicious but more nutritious!

The Best Mediterranean Salad

I feel like I may be misleading a few of you who are reading this recipe. Yes, it is a salad but it’s no wimpy, low calorie, boring salad! This is one of the best and random salads I have ever made/eaten! Inspired by the salad making event I attended at chop’d salad bar, I wanted to recreate my vegan creation at home. The sweet potato can be substituted for basic roast sweet potato or removed all together, I just love sweet potato too much!
