Creamy Vegetarian Courgetti

Since my post holiday weight gain I’ve been getting creative with vegetables so I can add as many into one meal as possible, one of my new favourite quick and easy dinners includes courgette, carrot, mushroom, onion and can have peppers added in for a larger vegetable hit… Perfect to make extra and reheat the next day…

Ingredients

Tsp olive oil

Large white onion, halved then sliced

5- 7 approx chestnut mushrooms

 

1 tsp lazy garlic

1 heaped tbsp cream cheese

milk to thin sauce

1 large courgette, spiralized

4 large carrots, peeled and spiralized

Big handful of spinach

Macadamia nuts and/or pine nuts toasted

parmesan and black pepper to serve

Serves 3-4

 

Method

heat the olive oil, add the onions and soften, add the mushrooms

once the veg is soft and browning slightly add the garlic, cream cheese, milk and stir till it turns into a slight sauce

stir in the carrot and Courgetti and cook for a few minutes till it softens slightly, add in the spinach and stir for a couple of moments

serve with toasted nuts, Parmesan (optional) and cracked black pepper

 

[top tip – I like to add in some black bean or edamame spaghetti to bulk this out abit or even pasta if carbs are desired]
